For 14 days, the editor and producer of the book, Astrid Roth, and I photographed the dishes prepared by Arnaud Lebossé in an improvised studio in a side room of the Amiral restaurant in Concarneau—and often tasted them as well. Astrid’s fish-styling skills were exceptional.
